Instance buddy priest healer CC which is best?

I'm currently using the one originally made for pally, it just heals like mad, but I hate not being able to customize it really, unless I'm just dumb.. whats everyone else use?

Gilderoy is hands down the best. So yes you are using the best one

Is it me though or can you not config it as a priest?

You get no GUI (for now) still you can go to HBFolder/CustomClass/Config and you will find an XML file with your priest name in it.
You can change whatever you want that's the config file
