If you could only have 1 toon to bot for gold/mats, what class + profs?

I want to focus having just 1 toon that does all my botting for gold/mats

I've heard Rogue is good because of pick-pocketing and isn't too bad at soloing

Between Mining/Herb/Tailoring, which of these is the best gathering combo in your opinion?
