Gathering without combat?

Hi.
i'm a druid and i doesnt need to dismount when i'm gathering(herb), so when i'm in combat, i cannot go without killing monsters?
i just want to gather and go away, not killing 1 thousand mobs around a node.
same with mining..i want to just mining and run away without killing mobs.
