Ok let's say I have, for example, arcane sentry avoidance to 25, and 75%. Does this mean when my hp reaches 75% it will avoid arcane sentrys by 25 range? Also what do I need to tick here:

I have all avoidance turned off because no matter what I tick (I tried every combination), it will avoid everything 100% and not the 75% how I set it in the monk avoidance. Obv this is bad for clear speed. This is only an example. It happens with all AoE.
 
'Attempt to Avoid AOE' is an ON/OFF switch for most avoidance. There are some animations and monster abilities that are hard-coded and cant be configured, that are excluded from this setting.

'Path around AOE' flags the area of an avoidance actor as an unwalkable or negative weighted area, so that the bot's navigator component which handles movement will not attempt to walk over it.

'Radius' is the distance required between you and the avoidance actor. it should only avoid if the distance is less than the slider value.

'Health%' is similar, it should only avoid if player health is below the slider value.
