Best class for herbing/mining in Legion @ 110?

Hi guys.

So, i've been levelling a druid to herb & mine in Legion @ level 110, but I have to say, i am extremely dissapointed with druid.
It feels so weak. If it gets more than 3 mobs, it dies. Almost same for Guardian.

I've even bought some gear for the druid, but it hasnt really made any difference.

I have a free level 100 boost, so I was thinking of making another toon level 110 and go with that instead, but id like your opinions first:

Which class/spec is the most suitable for running around on its own, herbing & mining in all different Legion zones?

MY ret pallys made me 15-25k GPH consistently during this expansion.
I mostly farm starlight rose using a rather unconventional route. The price on those dropped a bit, but its still mad profit compared to everything else.
Theyre only ilvl 790 but they barely die, although my profiles try to avoid mob pulls as much as possible.
 
I am not struggling with using tanks or pet classes for gathering. Good sustain and lowish risk.
 
What ilevel is your guy? I don't think you can just free farm without at least some gear. I'd recommend doing the world quests for gear so he can take a few guys at once.

Also, followers help.

I have a ret pally 810, and he keep die a lot, really weak class for bot, or I miss something :/
 
Update, after I bought some gear for the toon (spend like 10k) and started using my main PC, which has alot better performance, higher FPS etc, the bot is now running flawlessly. Where it couldnt kill 3 mobs before, it does that perfectly. :)
