Some are working CURRENTLY, others are not. As for using cr's in legion, it's up to the developers. If you're meaning later in legion during raiding and pvp, then most likely yes, but again, it's up to the developers.
Most cr's are currently being updated and will be a bit before they are released. Developers like Tuanha and the two from Gladiator Suite will probably be awhile because they have almost 1 of every class.

Please check the release threads of the 3rd Party CR developers. No one will list things here for you.
If you own a CR or if you are interested in one just check the corresponding thread.
Do not forget HB is on a test release atm. and there will be updates to wow again soon meaning until everything runs like before patch 7.0.x it can take a couple of more days/weeks.
