I find cobalt doesn't go to fast on my server. I sell the odd stack for around 30g is. only put like 5 up at a time.
With Saronite I either make Saronite bars and sell them, or I go Saronite bar>titanium bar or Titansteel bar. All depending on how the market is going. Since the patch, iv been getting 40g each titanium bar, and Titansteel is only going for 80g. Before the patch titanium bars were 11g, and titansteel was 70g.
Herbs on the other hand are thru the roof right now on my server. Lichbloom/Icethorn are at 50-80g (up from 10-12g) a stack depending on how much is available. All the other herbs like goldclover/adders/tiger lily etc.. are going for 30g a stack. Since I have all herbs and ore stock piled in 5 guild banks, I have been selling the ores to people in trade or on the AH. Most are buying them to mill down right now in to inks to make glyphs.
So to answer your question, sell via trade or the AH. If prices are cheap, look at your other options like making titansteel, bars, belts, flasks... It helps to have access to a alch, scribe, blacksmith.
