If you are only using these three characters, is it better to do ore/JC, herb/inscription, alch/enchant? This would allow 2 bots to be gathering at the same time. Or is it better to just have one gathering bot and bot the other 1 or 2 in other parts of the game? Sorry if this should be obvious, new to HB.

Well, you'll still get the same amount of mats. do you mean 3 accs or 3 chars? because with 3 accs you could have 3 gatherers and use 1 char to log in a few times per day to shuffle.

Thanks. I actually meant 3 accounts. I suppose you have your crafters on the same account as your gatherer then? And just send mats to those crafters and shuffle within a single account? So for three accounts, perhaps the following setup?

Acct 1: toon 1: ore/herb, toon 2: JC/Ench
Acct 2: toon 1: ore/herb, toon 2: Inscrip/Alch
Acct 3: AH and gold sales?

I have one acc only for shuffling and one only for AH, since I want AH to be on all day and I dont want to interupt gatherer to shuffle, its much if you have many gatherers.

If I were in your situation I'd have all shufflers on acc 1 + gatherer, so acc 2 can be gathering without interuption. It doens't matter much I think, but it seems annoying to log two accs and send stuff between them/gbank instead of doing it one acc

I was doing 24/7 before but got temporary banned on one account, now I do like 16 hrs per day.
But I use HBrelog and its automatic, so I don't have to stop the bots to do stuff. I just log my shuffler acc and load a profile with ProfessionBuddy, and he'll prospect, cut gems, rings/necks, disenchant, put enchants on scroll, send to bank char, log char 2 and do flasks/transmutes, send to bank char, log bank char, put in guild, go with ahbuddy and withdraw.
