What Professions should I get?

Basically, I just leveled up a paladin to 85 and he has max mining and herb. I also have a lvl 80 shaman on the same realm with almost maxed JC. What other professions should I get to use the herbs and ores from my paladin? And what should I make with them? My realm is Moon Guard if that helps.
