I haven't looked at profiles for this in some time, but you will likely have to select a profile for each mount you wish to farm.
PvP Profiles are effectively nonexistant, all they do is follow a different path through a BG, which has little overall effect. And has nothing to do with class. If you need to customize your bot for PvP, look into Combat Routines for you class specifically designed for PvP or arena usage, and research PvP Plugins like Squire for navigation.
The thing to consider for profiles that are grinding, gathering, or professions, is that the "best" profile is also the most commonly used, and highly likely to make your bot stand out. I can't tell you how many times I flew through Uldum during cata and saw fifteen bots all following the exact same path, waiting on each other for nodes. That's begging to be reported.
Outside of questing, the best thing you can do (especially for gathering), is create your own, or gain access to, an effective private profile.
