Why Zoo?
Because it is better than midrange and control for hearthbuddy. Midrange works well in curve than zoo but it is not easy to make it happen. All hard remover and aoe, that are wasted sometimes, make less value, so an easy lose as a control. Every match with other kind of deck require more time than a zoo matchup so less time for gold making. Zoo just keep the board up, then it lose or win. Easy life!
Percentage of win?
Almost 90% vs brainless people, give no time to realize how much is fast that deck. Never under 60% with normal players.
How the deck works?
The idea is rushing your opponent with low cost cards and at the same time keep the trade up, just because Hb prefer to trade in a lot of situation. A good start with low of low cost minions with a follow up of spell and/or Argent commander can give an easy and fast win; otherwise hb will take the control of the board or try it with no limits. It have all the weapon to deal with it. Board control is the key. About Tap the bot doesn't use it if it has already enough mana to summon as much as possible, if the HP are low and if it has got more than few carda.
Replacement for card
To be honest, all cards with good effect and same cost of almost any card of this deck will be an ok choice. Abusive sergeant and Alpha Wolf are a must for pushing damage but they need board so I will consider them as a kind of buff. I'm just writing which are the best replacements for me:
Power Overwhelming=Soulfire>Forbiden Ritual>Mortal coil>= Dark bomb>Demonfire
Mortal coil is more efficient than Dark bomb if the deck doesn't have too many cards replaced
Abusive sergeant=>Dire alpha wolf>Lance Carrier>1Raid leader>=Shattered sun cleric>=Elven Archer
Flame imp>Possessed Villager=>Argent Squire>Voidwalker>Youg Priestess>Dragon egg>/Shieldbearer>=Elven archer>Zealous Intiate
Dragon egg/Shieldbearer are fine with Sergeant and wolf inside the deck
Dark peddler>Knife juggler>=Flame juggler>Crazed alchemist>Huge Toad>Bilefin tidehunter> Acid swamp ooze>
Wrathguard is not viable, plus Flame imp you gonna lose before win. Try!

Kobold is viable if the deck have 2xSoulfire and 2xMortal coil and/or 2xDarkbomb
3mana: Shuttered sun cleric>Razorfen Hunter=Ironforge rifleman
Razorfen hunter is better if the deck is similar to the original one, otherwise rifleman can push missing dmg from a poor deck
6mana: Reckless rocketer

Spell: Remove all
Abusive Sergeant and all 2 mana drop: Remove all / Hold 1 card only if you also got Argent squire, Flame imp, Voidwalker, Possessed villager
All 1 mana drop but Abusive Sergeant and spell: Get all
All 3+ mana: Remove all
