I'm trying to get a good idea of rarity to use on my guy.

Currently I'm roughly 155 Rarity and 10-16 quantity.

I am wondering if I drop item rarity gem and go for more DMG and quicker clears if losing the 50ish rarity will affect me that much.

Has anyone had any experience in this or is it best to try 1-2 days with the gem and 1-2 days without it to compare drops.

I am running maps currently.
 
155 IIR and 16 IIQ is a total of 196% increased rare drops while 105 IIR and 16 IIQ is a total of 138% increased rare drops.
Just weigh that loss of 30% increased rarity against how much faster you kill stuff. It's really hard to calculate, running a test for a few days as you describe is probably the best way to find out.

Also consider using the DPS gem and dropping DPS nodes on the skill-tree for Movement Speed nodes if you have any up for grabs around your skill tree. MS is often an underrated factor in MF:ing. That is, unless use a movement skill effectively.
 
The total increased rarity?
Drop rate = (1+(IIQ/100)) * (1+(IIR/100))
Subtract 1 (your initial drop rate) to get your increased rarity.
I did the math in my reply above in my head but it should be pretty accurate.

Yes. MapRunner (actual version) don't handle inventory space that well (next one does) so it often leaves lot of blank space even if an item would fit (or 2) so yes, that can happen.
