Is there a way to Quest and farm your profession example "Mining/Herbalism"? If so, can you please tell me how to do it. Thank you

try the 'settings & tools' window

but do note - most questing profiles do not support farming to skill level nor training for said professions ... so it's best to just run GB2 after you hit 85
