Professions After 80 or While Going to 80?

Quick question, which do you think is faster, leveling the 2 gathering professions while getting to 80 or just hit 80 and run the profiles since there's no need to worry about ganks and mobs and stuff. Or is it faster to just level professions while you hit 80 and have both professions complete at 80 :\

I just wait to 80 before leveling mining and herb, makes it easy to coordinate your profession level to the zone you're in.

Honestly, if I were to start a new character I'd pick up the professions as fast as I could.
Less trouble and means that once you hit 80 you can start farming - up to you though really.
