I got a few questions.

can i run my bot and watch it do work on the journel in the pokemon go app with gps off?

Or dont i ever touch the app while im botting?

How are yo guys botting? I would like to know

Don't do it, you will definitely get your account flagged by logging in on two devices at once.

Just in case: if you are at home your phone is usually connected via your home router so your phone and your PC have same IP.
Different is your MAC, but I don't know if they track it.

I guess if you're on your home network botting near your home and log on with your phone on your home network too you should be fine, because that's what I do all the time.

My suggestion : use bot to level up, get lures (to use on main account.) . once open bot account on phone, don't return to bot using same account.

i do this as well. You can also turn off location services on your Iphone, and log in on your phone, but off the same ip connection (i.e. home wifi). If location services is off your location can't be tracked.
