Mining Only or Herbing Only?

Quite curious why a lot of the profiles have like mining only elementium ore or herbing only whiptail? I know you can choose what you want to farm but isn't it better to do both and collect everything?

I mine but don't harvest herbs.... So just mining is good for me. I have private buyers for ore so I don't want to waste THEIR time gathering herbs.

Always nice to have the option I find, personally I use a Pally for mining and a Druid for herbing.
Although I've now got a nice DK for mining so will eventually switch my Pally over from mining to JC as it has BS already.
