Mining & Herbalism @ lvl 75

I wanted to know if it's possible to max these two proffesions and farm them with a lvl 75 char.
 
Doubt it as the high end herbs/ores are in cata zones which will tear that level 75 toon a new one, why 75 anyway?

I dont want to level up to 85... i will farm in Hyjal, so what level will i need?
