Leveling past 80

If leveling a toon you are planning to use in dungeons/raids - quest to 85 to open zones and phasing areas for later use. Arch will keep you safer (imo) but it takes longer and you will get less out of it for a toon you actually plan to use frequently.
If leveling a toon you plan to use as nothing more than a GB farmer, equip some basic cata green gear at 80/81 and farm mats. The xp is about 3k per gather at 81 and scales as you level so after a week or so you will ding 85 from gathering alone. (note: you will have to either bot or play by hand the zone opening quests chains if you want to use the portals in SW to get to and from the cata zones - these are not long quest chains)

Put your character in cataclysm greens and blues.
Set it to farm herbs and mines, i got 80-81 in 6hours without leveling gear, and reached 80-85 in less than 2days played and earned a shit load of gold.
