Is there anyway to turn off the quests that you have setup to run i.e. the ones that require me to take over and escort and what not.

not unless you want to grind (or do archaeology or pvp), no

Honestly the level 80-85 quests are pretty fun. And you can rock through them in a matter of hours, not that big of a deal.
