How to avoid mobs?

So I was wondering how do I avoid mobs that are not part of a quest? my mage is running towards mobs and attacking them to get through them, why can't he take the road to go to the destination or avoid the mobs so that he can do quests faster? How do I do that? Is it combat routine or quest profile that is doing this?
