Fastest and best

I want to start a second account to just herb and mine for me. Which class should I be? I want to know if there is a faster class at higher end to gather the mats and fast to bot up to max.

For pure gathering I roll a Druid as not having to demount/mount while herbing seems to pull in a fair bit more than my Pally.
