I figured it would be related to a plugin. I've been having a lot of issues with a pluggin called MIR2 (I forget its full name) that seems to interrupt things to check my bags for items to clean up. I tried narrowing when the plug checks my bags, but discovered even then it was causing issues that the bot would not recover from unless I stopped and started the process.
Since disabling almost all of my plugins, including anti drown, I experienced less issues (though it was not long ago I decided to do this - I haven't had time to properly analyse the outcome).
I've attempted to re-create the issue both with and without plugins by starting flying near a node and activating the Questing profile. Here are the results:

Conclusion: It seems I cannot reproduce the events that caused the bot to perform this way. I'm not sure what else I can do at this point. It seemed to only happen during the BC expansion, which I'm beyond. At this point HB simply cannot use a flying mount, so it doesn't (usually) try to. Either way thank you for your quick responses! I hope this data helps solve the issue for future users.
Key distinction between the events:
- In my attempts I started by hovering over a node then activating HB, which was the original solution to the problem in the first place.
- After harvesting, HB wanted to default to a ground mount. During the original error it wanted to default to a flying mount. Maybe this has something to do with it?
In my log the testing occurred at [06:13:29.566 N], if you want to search for it.
For the record the only thing I edited in the user settings file was deleting a condition for the spell Lay on Hands. Previously it wanted to attempt flash of light (if it could) before casting LoH, but I removed that line, thereby making the bot want to LoH immediately should my health reach < 20%.
If I can isolate another instance of the bug happening I will be sure to reply to this thread.
