Any ideas for a severely overpopulated server?

I rerolled to a highly-populated Horde server for personal play. I don't really bot for the gold selling or anything. I mainly bot for personal play.

I am a mount junkie and want to make a bit here and there for some TCG mounts. However, on my last server, I'd pull about 5,000g a day through botting ore and herbs on an alt druid. My main on the new server I rolled herbalism to just make some gold here and there. However, on a highly populated server, the AH is stacked with it all and there are so many bots out there. I'll ask in guild what sells good on the server, and the answer I get usually involves information about herbs and ore being "overbotted" right now.

I've got a DK at 71, which is a very easy grind to 80. I can pull 78+ in a day or two when I have off. I can make him a "botting" toon to keep my main from being eyed in guild since people are apparently very aware of bots.

Right now, I'm working on my getting my turtle mount and farming cata fish to sell. They are 60-75g a stack on the AH. If I fished up 25 stacks, I'd end up with about 2,000g a day from selling the fish and volatile water.

I'm curious if anyone has any ideas I can do for gold on the side about 8-10 hours of farming a day? I'd need 50+ stacks of herbs to pull 2,500g or so a day, and with all the bots, it'd take longer and be a lot more risky. Pets, rares, cloth, etc. Just looking for stuff. I've seen some people buying bulk Savage Leather too. I know it's purchased for about 60g a stack in bulk. Is it farmed very quickly?
 
With an farming profile from this forum, in twillight highlands im averaging 120 kill/hour farming leather, that means around 6 stacks/hour, for me its okay :) cause theres barely any people at the spot, and it doesnt take babysitting or anything to do :) But else, I would say, if you can sell Captured Firefly, Disgusting Oozeling, Tiny Dark whelpling, for more than 4-5k Than you can farm them :) normaly 1-2 pets per night, and then get some and farm something else. Its also alot easier, doesnt take time to just list the pets, or /2 wts the 3 pets blabla. :)
 
If mats are really cheap look at how much profit is in making things from them, every server is different and it may be that this server you are on has cheap mats but expensive glyphs? If ore is really cheap you can go down the prospecting route and yield gems from it, so many things you can do with a high pop server and cheap mats you just gotta think past the competing with bot mentality and look at the opportunity.
Of course it helps to play the AH with a nice stack of gold too once you have enough to do so.
 
If you look further, you can often find a segment that is doing much better... like glyphs that you get from the book of Glyph Mastery... generally the ones learned from the trainer are dirt cheap cause there is so much competition.
