For PvP it really depends.. Id say a melee has more chances of being banned than a ranged. My hunter looks pretty legit, as it stands in one place. Melee tends to spin around and turn perfectly, etc.. choppy running. Gold Selling should be #1 as they can ban you pretty easily, grinding usually...

Apoc is working on a smarter pvp system which, from his irc posts, seems to be very promising. I would stick with the 1-2 days thing because you have to take into consideration wait times, losing, and how good your player is. :(

This profile worked well as a blood elf rogue, and mage around the 15-20 level ranges. When it moved to ashenvale it died like no other because of.. mobs 3-4 levels higher than itself, and the alliance skull tree - and night elves attacking the fort. Personally I would like to see some updates...
